The following photo gallery is from the Vietnam Cafe located at 522 Campbell St., in Kansas City, MO. The cafe is open daily from 9 a.m.-8 p.m. and closed on Tuesdays. 

The cafe offers a variety of menu items and specialty coffee, soda and tea, and is an inexpensive way to expand your palate for different cultural cuisine. 

One dish they serve is Goi Cuon Chay with peanut sauce. The meal comes with two vegetarian wraps loaded with tofu, lettuce, mint and vermicelli. At only five dollars, the dish had a very clean and refreshing taste.

One of their many locations across the Kansas CIty metro is in downtown Kansas City on the Country Club Plaza. Their other locations include cafés, shops, and bars. The store sells merchandise crafted by several artists, such as art, baked goods, clothing and personal care items. The store was recently renovated to create an aesthetically pleasing environment so that customers can enjoy their bar and bakery and the next-door coffee shop. Made in KC, located at 306 W 47th St. in Kansas City, MO, would be a perfect place to enjoy a study break off-campus and a little bit of Kansas-City themed shopping!

The following pictures were submitted by freshman Regan Burgess, featuring St. Pete’s Beach in Florida minutes before a tropical storm, alongside the views from Puerto Vallarta, Mexico. She also photographed a butterfly— which she describes as looking identical to the emoji — that flew near her face and landed right on the leaf.
